Walnut & Pistachio Baklava

1 In a saucepan, add sugar, honey, peel and juice of the orange, and water. Heat it up until sugar is dissolved and everything is mixed together. Set aside to let it cool. Strain the syrup to filter out the orange peel before using.

2 Toast the walnuts and pistachios at 375 F for 10-12 minutes if they are not already toasted. Use a food processor to process the nuts to the desired texture (no large pieces but still have some texture). I processed the pistachios and walnuts separately so that I can reserve 1 tbsp pistachios for decoration later. Mix the nuts with cinnamon.

3 Melt the butter.

4 I used a 9-inch dish; Each 18" x 14" filo dough can be cut into 2 9" x 9" squares and 2 5" x 9" rectangular, making 3 layers. Cover the filo dough with a damp towel to prevent drying out.

5 Here is how I layered the ingredients: 6-8 layers of filo, 1/3 (120 g) of the nut mixture, 3 layers of filo, 1/3 (120 g) of the nut mixture, 3 layers of filo, 1/3 (120 g) of the nut mixture, 6-8 layers of filo, drizzle about 2-3 tsp butter between each filo layer.

6 Chill it in the fridge for about 30 minutes or until the butter is solidified.

7 Cut it into your desired shapes.

8 Bake at 350 F for about 40 minutes or until golden brown.

9 Let it cool for 5 minutes, strain the syrup to filter out the orange peel, pour the syrup onto the baklava, decorate with the reserved pistachios.

10 Wait for it to cool down to room temperature before serving.


Tips

1 Filo dough: you can buy it frozen from grocery stores. Defrost it in the fridge before using. When working with filo dough, always cover the pile with a damp towel to prevent it from drying out and cracking. If it breaks, no big deal, just hide it in the middle layers!

2 Honey: the flavor of the honey makes a difference in the taste of the end product, make sure you use a honey you like.

* I cut it into 8 slices first, each 1/8 was then cut into 3 full and 3 half diamonds. One serving is one full diamond or two half diamonds.
