Tiramisu

Instructions

1 In a mixing bowl, combine 4 egg yolks and 2 tbsp sugar, place the mixing bowl over a simmering pot of water (bottom of the bowl does not touch the water), whisk constantly until the mixture is pale yellow and the temperature turns 149-158 F (65-70 C). Set the bowl aside and let it cool to room temperature.

2 To the mixing bowl of yolk sugar mixture, add 1 tsp of vanilla extract and 8 oz of mascarpone cheese, gently fold using a whisk or spatula until just combined.

3 In another mixing bowl, add 6 oz heavy whipping cream, 1 tbsp of lemon juice, and 2 tbsp of sugar, use a hand mixer or stand mixer to whip the mixture until stiff peaks are about to form.

4 Fold the whipped cream into the mascarpone mixture.

5 Add 2 tbsp liquor to 1 cup expresso coffee, mix well.

6 Quickly soak a lady finger in the coffee liquor mixture, remove and lay it into a container, repeat until lady fingers cover the bottom of the container.

7 Scoop the mascarpone mixture onto the lady finger layer and spread out evenly using a spoon.

8 Repeat step 6 and 7 to make another layer of lady fingers and mascarpone mixture.

9 Dust the top with cocoa powder.


Tips

1 This recipe makes 2 4-cup containers of tiramisu. The amount of lady fingers may vary depending on the size of your container.

2 Do not over mix the mascarpone cheese. The fat tends to separate if you over mix.

I attempted the tiramisu, I do not recommend monk fruit as an alternative, maybe swerve confectioners sweetener. I over soaked the lady fingers. I was completely satisfied with this recipe. Thank you
