Instructions
1 Cut tofu into 1/2 inch slices, pat dry.


2 Heat up oil, pan fry the tofu on medium heat for 6-8 minutes on each side, until golden brown and crispy.

3 Boil a pot of water, cook the bok choy for 2 minutes, remove and set aside.


4 Cook the enoki mushroom for 5 minutes, remove and set aside.


5 Cook the soba noodle for 5 minutes, rinse in cold water and drain.


6 Boil 4 cups of water, add dashi powder and miso and mix well.



7 Assemble the noodle bowls with all the ingredients and the broth, top with optional seaweed and enjoy!

Tips
1 Make it vegan: the only non-vegan ingredient in the recipe is the dashi powder, it contains fish. You can find vegan dashi powder or make your own using kombu and shiitake mushroom.
