Savory Scallion Cookies

Pictorial Instructions

1 Cream the butter, scallion oil, and sugar using a stand mixer or hand mixer for 3-4 minutes or until white and fluffy. Add salt and scallions, mix well. Shift in the flour, mix until just combined.

2 Preheat oven to 365 F (185 C). Transfer the dough to a piping bag. I am using Wilton 4B piping tip. Pipe 2-inch circles on a parchment or silicone lined baking sheet. Bake for about 15-17 minutes or until the edge of the cookies turn slightly golden.

3 Let them cool completely before removing from the baking sheet.

Tips

These cookies are savory, slightly sweet, and melt in your mouth. I used the scallion oil I made earlier to replace some of the butter in the original recipe. It gives the cookies more complex flavors. If you don't have scallion oil, swap it with 3 tbsp of butter.
