Poke Bowl

Ingredients

  • 1/2 lb sushi grade salmon

  • 1/2 lb sushi grade tuna

  • 1 tbsp soy sauce

  • 1 tbsp rice vinegar

  • 1 tsp wasabi

  • 2 cups rice (uncooked, short grain)

  • 1 cup frozen edamame

  • 2 Persian cucumbers

  • 1 radish

  • 1 tbsp furikake rice seasoning

Instructions

  1. Cut the fish into 1/2 inch cubes, mix with soy sauce, vinegar, and wasabi, let it marinate in the fridge for at least 30 min.

  2. Cook the rice.

  3. Cook the edamame according the the package instructions.

  4. Thinly slice the cucumbers and radish.

  5. Assemble your bowl.
