Ingredients
1/2 cup Old fashioned oats
1 cup water
3 tbsp plain Greek yogurt
1 small peach, cut into small pieces
6 halves of pecan and almonds
1/2 tsp cinnamon
Honey, or other sweeteners such as brown sugar and maple syrup (optional)
Instructions
Add 1 cup water to 1/2 cup oats, microwave for 2 minutes.
Add Greek yogurt, peach, nuts, and cinnamon.
Add your favorite sweetener if desired.
Tips
Let the oats soak in water for a few minutes before microwaving to allow hydration. I found it easier to cook the oatmeal to the desired consistency when soaked. You can also let combine oats and water and leave it in the fridge to make "overnight oats" if you prefer it cold or you want to save time cooking in the morning.
Use whatever fruits, nuts, and spices you like or have in hand to change it up!
To make it vegan, swap yogurt with plant-based milk or yogurt. Use brown sugar or maple syrup as sweeteners.
