Korean Braised Potato - Gamja Jorim

Recipe inspired by Korean Bapsang

Ingredients

  • 6 medium sized potatoes, peeled and diced

  • 1 small yellow onion, diced

  • 1 tablespoon vegetable oil

  • 3 tablespoon soy sauce

  • 1 tablespoon cooking wine

  • 1 tablespoon sugar

  • 1/2 tablespoon sesame oil

  • 1 tablespoon toasted sesame seeds

  • 1 green onion, finely chopped






Instructions

  1. Heat up 1 tablespoon vegetable oil in the skillet, saute the potatoes and onions for a few minutes or until slightly golden.

  2. Add soy sauce, cooking wine, and sugar.

  3. Add about 3/4 cup of water, or until about 1/2 of the potatoes are submerged in the liquid (this depends on the size of the pan).

  4. Cook on medium heat, use the back of the specula to gently push around the potatoes, so that each side of the potatoes gets to soak up the sauce. Only do it 3-4 times so that you don't break up the potatoes too much (I did not cover the pan the entire time).

  5. Check the texture of the potatoes, the desired outcome is when the sauce is reduced, the potatoes are cooked through, still a little firm but not mushy.

  6. Add sesame oil, sesame seeds and green onion in the end.
