1 Thoroughly wash the kale, tear the tender leafy part off from the tough stems. Peel the onion and garlic, cut the tomatoes, tofu, and sausage into chunks.
2 Add all the ingredients into a pot, cover and bring to a boil on high heat. Turn heat to low and let it simmer for about 10-15 minutes. Stir occasionally. Serve with bread or rice.
Tips
Change it up: Use any kind of sausage of your choice. If you want to make it vegan, skip the sausage, and add more tofu. Firm tofu will also work well in this recipe.
