Jicama Peach Cucumber Salad

Ingredients

  • 2 cups diced jicama (about 1/4 of a jicama, 10 oz or 300 g)

  • 1 peach, diced

  • 1 Persian cucumber, sliced

  • 2 basil leaves

  • 1/2 teaspoon tajin

  • Juice from 1 wedge lemon

Directions

In a large bowl, add all the ingredients, gently toss them together and enjoy!


Tips

Add cheese, nuts or seeds of your choice to boost up protein content.
