1 Bring a pot of water to a boil, add the spinach, cook for 2-3 minutes.
2 Remove the spinach from the pot and soak in a bowl of cold or ice water for a few minutes. Squeeze out excess water and cut into bite-size pieces.
3 Add garlic, soy sauce, sesame oil, and MSG, mix well and serve.
Tips
1 I'm using Taiwanese spinach in this recipe. I like to keep the roots because they taste sweet. However, if you cannot find Taiwanese spinach, regular mature spinach will also work.
2 Blanching the spinach helps reducing oxalate and stringy taste. Blanching also shrinks the volume of the spinach significantly so that it's easier to eat more vegetables. In this recipe, 1 serving is equivalent to about 10 cups of raw spinach.
